New Day Cleveland Apperance- Good Morning Idaho!

Yesterday was back in the studio for my 8th time- can you believe it?!  I'm not exactly sure how I scored such an awesome little gig, but I am loving it!  New Day Cleveland is a lovely show, and has seriously the nicest people. 
 
For my segment yesterday we were planning for Lent- Meatless Meal for a Family of 4 for under $20.  Challenge taken!  Breakfast for Dinner is an awesome way to stretch the bank, and who doesn't love it?!  My boys would eat it every night if it was up to them. Good Morning Idaho is a recipe that takes a fun twist on the traditional eggs and hash brown breakfast. 
 
Here I am prepping for the show- we go live in half an hour! 
 
 
My sister came along for some moral support and to help me out getting things together before the show.  She is one of my favorite people in all the world and I am so lucky to have her not only as my sister but also best friend favorite Partner in Crime!  Here we are hanging out in the Green Room backstage waiting for the show to begin.  Perfect opportunity for a Sister Selfie!

Oh, and at the 5:21 mark you get to see a perfect shot of my very pregnant belly :)  So now I have two children that have made an appearance with me! lol.  Love it.

I get to be a TV Star tomorrow!

Set your DVR's, I am back on New Day Cleveland tomorrow morning at 10:00am (I will be the first one up, so tune into the very beginning!) This week they gave me a new challenge for Lent- Meatless Meal for 4 for under $20. Our family LOVES breakfast for dinner and I am sharing a favorite of ours- "Good Morning Idaho", which is eggs baked in a potato! It is a fun twist and not to mention completely delicious! See you tomorrow on Fox 8 News!

My New Day Cleveland Video with the recipe for Tortellini Soup!



What a rush! Those (almost!) 7 minutes go by so, so fast! LOL.  But today was fun, fun, fun and I am so thrilled I have been blessed with this opportunity to work with such a wonderful group of people.  I have decided that I could truly get used to this life (grin).

And here is the recipe for my delicious Tortellini Soup from the show.  You will love it, I promise!



Tortellini Soup

3 cups beef stock (chicken or vegetable may be substituted, but the beef gives a nice rich flavor)
3 cups water
1 ear corn, kernals cut off and “corn milk” scrapped*
1 medium zucchini, chopped into bite-sized pieces
1 medium onion, chopped
1 (28-ounce) can diced tomatoes, undrained
1 package (9 ounces) refrigerated cheese tortellini
1 cup green beans, trimmed and cut into 1 inch pieces
1 tablespoon fresh basil, minced (or 1 teaspoon dried)
1 tablespoon fresh oregano, minced (or 1 teaspoon dried)
salt and fresh ground black pepper, to taste

*Quick tip to Easily cut corn off the cobb- A bundt pan is the best bowl for this job! It has a handy hole to hold the corn steady and then the bowl for all the kernels to fall into. Gotta love dual purpose items!

Turn your bundt pan right side up, place the cleaned corn cob upright with the tip of corn resting in the hole of the pan. Slowly slide the knife down the sides of the corn, cutting off a section at a time. Once all the corn is removed, turn your knife around so the flat side is facing the cob.

Repeat the process, scraping down on the cob collecting all the sweet corn milk in the bowl. This is special stuff, you definitely don’t want to just throw it away! It is sweet, juicy and will give a great added flavor to the soup.

Directions for the soup:
In a large stock pot over medium heat, add one tablespoon extra virgin olive oil and sauté onion and zucchini until tender and beginning to caramelize. Add remaining ingredients and simmer until vegetables are tender. Add tortellini’s and simmer 7-8 minutes or until they are fully cooked and floating to the top. Serve with nice crusty butter bread.

Wanna watch me on New Day Cleveland?!

Hello friends!  The lovely people of New Day Cleveland uploaded yesterday's appearance onto Youtube for all of those that missed it Live!  And you know what- this is the first time I can actually watch myself without cringing.  I just may be getting used to this Live thing.  :)  I can't chat long, I have little boys that need to run around outside and burn some energy!  But I will be back to fill you in on all the fun-ness of yesterday!  Thanks again for all your awesome support! xoxo

Udon Noodle Salad with a Spicy Peanut Vinaigrette


3's a Charm!  Today I am making my third guest appearance on the television show New Day Cleveland!  I don't think I could ever get tired of this much fun!  This morning they asked me to share a recipe that is great for getting back into the school mode.  Right away I thought of my Udon Peanut Noodles.  It is something simple to prepare with all of the new schedules us as parents are trying to juggle, but also great for the learning minds!  This recipe is on a very regular rotation in our home.  I could probably eat this on a weekly basis, no joke!  We LOVE it!

This is a chilled pasta dish, easily working perfect packed in the lunch boxes giving a nice change up to the sandwich they normally might carry.  The sauce is made with peanut butter, which kids seem to get a kick out of!  But the recipe is also chock full of vegetables and lean protein that makes us more then happy to serve it to them!  It is a meal I can feel good about giving and also enjoy eating myself!

There is a slight spice but nothing that my own children feel is too hot.  But please feel free to adjust to your families preferences!

There is a similar recipe I have already shared with you, but this one I did some tweaking and love it even better.  I made the sauce lighter, more vibrant and better for a cold dish. I hope you all love it as much as we do!


Udon Noodle Salad with a Spicy Peanut Vinaigrette

For the Noodles:
1 Package Thick Udon Noodles, cooked according to package directions, then chilled (spaghetti or linguine would also work just fine)
The meat from one prepared rotisserie chicken, chopped
2 Cups carrots, julienned (I bought the bag in the produce aisle all prepped for me already)
2 Cups english cucumber, julienned
2 Cups cabbage, shredded (again, I used the coleslaw bag in the produce department)
4 green onions sliced, white and green parts
2 Cups Sugar Snap Peas
2 Cups bean sprouts
2 Tbsp Sesame Seeds, toasted
3/4 Cup shelled peanuts, chopped

Spicy Peanut Vinaigrette
Makes 1 cup

1/4 cup chicken broth
1/4 cup rice vinegar
1/4 cup canola oil
4 Tablespoons creamy peanut butter
2 Tablespoons soy sauce
1 Tablespoon fresh ginger, grated (or 1 tsp. dry ground)
1 teaspoon sesame oil
1 teaspoon red pepper flakes

Add all the ingredients in a medium bowl. Using a hand blender (or stand up blender), mix everything until smooth, about 30 seconds.

You may also use a hand whisk to make the vinaigrette, although the blender makes quicker work of it! If you do not own a blender, microwave peanut butter for 15 seconds, softening to make mixing easier. Add to remaining vinaigrette ingredients. Whisk everything until fully incorporated and beginning to froth. Set aside.

In a large pot of lightly salted boiling water, cook the udon noodles for about 5-7 minutes or until tender. Drain and rinse the noodles under cold running water. Set aside.

Using a DRY large frying pan, heat the sesame seeds on Medium heat, shaking the pan occasionally. Remove from pan when they begin to turn a light brown and become fragrant (about 3-5 minutes). Do not allow to burn!

Combine the cooked noodles, chicken, cucumber, sprouts, carrot, green onions, sugar snap peas, peanuts and toasted sesame seeds, reserving some of the veggies and sesame seeds and peanuts for garnish. Pour the Spicy Peanut Vinaigrette over the salad. Toss until well coated.

Serve chilled, garnished with the reserved veggies, peanuts and sesame seeds. Don't forget to have Sriracha on the side for those who like to add a little extra heat! Yum!

Ready, Set, Action!





Oh my goodness, if I thought my last visit at New Day Cleveland was a blast, today was even better. What a wonderful group of people to spend my morning with!!   It is always nice to have an idea of what to expect the second time around (although I must admit I was still nervous!!)  David Moss is so great to cook with.  He makes me laugh big time and keeps me on my toes for sure!  But he is incredibly friendly and made my cooking segment fun and effortless.  (Although I think I said "tomatoes" instead of "potatoes".  I am such a dork.  haha.  Nerves I tell ya!  But aside from my slip of the tongue I am really happy with my appearance.

Today is my BIG DAY on New Day Cleveland!



I couldn't be more excited about having another opportunity to work alongside David and Kristi again on New Day Cleveland today, this time sharing one of my most favorite soups Fresh Corn Chowder!!  They are so much FUN!!!!



Fresh Corn Chowder is a recipe I have shared with you here before, but well worth revisiting!!!  I love it at this time of the year when you are really longing for the sweetness of summer, corn on the cob and sun kissed cheeks.  But many of our days are still flecked with a chill in the air, a need for a coat and maybe even a flurry or two (especially if you live here in the Midwest!  What was with the snow these past few days?!!)

This recipe gives you the best of both worlds.  I love it made with fresh cut-off-the-cob corn.  But frozen corn also works so well since it is frozen pretty much immediately after being cut off the corn cob.  Almost as good as the seasonal kind, making it very soup friendly.  Use whatever is available to you, it will turn out amazing either way!

All of you local Cleveland area readers, please be sure to all tune in live or set your DVR's tomorrow morning at 10:00 am to Fox 8 for New Day Cleveland.  That's right, I have been invited back for a second cooking segment on their show!  How amazing is that?!  I am just so excited!  I have been a busy bee getting everything prepared for my cooking segment, getting a sassy new haircut and trying my darnedest to figure what in the world to wear- why is that the hardest part?!!  Oh yeah, that's right.  I write a cooking blog, not a fashion one. lol.

But I am feeling good.  My food is tasting yummy, and I am on cloud nine I was given this opportunity.  Again! Tomorrow will be a blast and I hope you all tune in to watch and cheer me on.  It is live TV you know.....

My BIG Day on New Day Cleveland

David was wonderful.  He is so nice and made me feel very comfortable right away.  Thank you!

All I can say is WOW. Today was an experience I will never forget.

When I started this blog as just a little hobby, a place to journal my cooking adventures, save recipes, and bookmark favorites I thought it was just that.  But over the past two years it has grown slow and steady and is becoming so much more.  I have really loved not only growing in my recipe writing, but also in my food photography as well.  At night you know how it is, you lay and bed and dream about those little adventures, those breaks that could push you into the next step.  But I always figured that if I ever wanted to appear on Television it would be because I applied, competed, knew someone who knew someone, in other words worked my butt to get there.  But they found me.  The lovely people of New Day Cleveland discovered my blog, liked it and ASKED ME if I would consider appearing on their show.  What?! Of course!!!  Holy Moly!

I guess in a way my hard work did pay off, just in a different way.  And for that I am honored, unbelievably flattered, and this entire experience humbled me in more ways then one.  But most of all it was FUN!

this is nervous little me, getting a feel for the kitchen and trying to relax after setting my food and supplies all up.  I am running through my recipe in my head for oh, about the millionth time....

When I arrived they told me that my segment would be starting at 10:04 am.  WHAT?!  The show starts at 10:00!!  Yep, I was going to be kicking off their show.  Oh, and did I mention that this is LIVE television?  No pressure or anything.

Honestly it felt good to do it right away- I always liked going first in class.  This is the basically the same thing, right?

Hey!  Look over there, you can see my mic.  This is real deal!  And thank goodness for it too, because I am still recovering from laryngitis.  This was by far my best voice day in about a week, but still gruff.  And straight ahead are the lovely ladies from Kajal by Kimberly preparing for their make-up demonstration.

I have to say the segment went really smooth.  I wasn't 100% sure what to expect.  But David guided me and I just went with it.  *phew* I knew I was comfortable with this recipe and cooking in general, so that wasn't what made me nervous.  It was the talking in front of a camera that made me a bit queasy.  I was to look at him as much as possible and to tell you the truth I hardly noticed the huge looming cameras after a minute. Of course I have personal critiques but I feel that for my very first time on tv, I did pretty darn good, if I do say so myself.  Opportunities like this don't present themselves very often, and I am 100% grateful for being given this one.  Thank you, Thank you.  

Along for moral support was my amazing husband Scott and beautiful sister Bonnie.  And thank goodness too. Because just having them there made me feel so much stronger.  Thank you so much you two!  I love you guys!!!  



When the show was over we headed out to have a celebratory Bloody Mary and a little bite to eat. Ahhhhhhh.  I could finally breath.  And replay the entire experience over and over and over.....

The recipe I made on the show is a Retro Kitchen favorite.  The Mustard and Vinegar BBQ Pulled Chicken in the Slow Cooker is a tried and true.  It is consistently in my list of most favorite recipes on this blog, so if you haven't given it a try yet, now you have no excuse!

Exciting News!

Guess who's going to be on TV?!
ME!!


I know.  I seriously can't believe it myself. I was contacted by the show New Day Cleveland, telling me how much they love my blog *gasp*swoon*!!!  (You mean people actually read this blog besides me?!!)  That alone was exciting news!  And if that wasn't cool enough, I was then asked if I would be interested in coming on their show to do a cooking segment with one of their hosts.  

Holy Moly!  That's the cat's pajamas!  Of course I would love to come on television!!  

Oh boy.  I've got my work cut out for me for sure.  lol.  


In all seriousness, I am so incredibly flattered and excited for this wonderful opportunity.  I not only get to be on TV, but I get to do one of my most favorite things in the whole world at the same time- cook!  I couldn't have asked for a better break then this.  Thank you New Day Cleveland for taking an interest in my favorite past time, My Retro Kitchen.   I am honored.  

Please be sure to set your DVR's to Fox 8 where you can see me having a blast in their kitchen cooking up some delicious food,  on Tuesday, February 21st at 10:00 am.  

New Day Cleveland is a local television show, think a smaller version of The Today Show, so I am not sure how far away from Cleveland people will be able to watch this.  But hopefully there will also be a clip on their website as well for all you out-of-towners.

This is a going to be a good year for My Retro Kitchen.
